Anaheim's Z-Wine Co. stomps on contaminants

Z-Brett Assay identifies key cause of red wine spoilage

Anaheim-based Z-Wine Co. is introducing a product that could prevent red wine spoilage in barrels. The Z-Brett Assay is an immunoassay-based biochip that provides early detection of Brett contamination in wines.

Brettanomyces, more commonly known as Brett, is a wild yeast that causes wines to be destroyed while aging in barrels. The yeast can penetrate the oak barrel and remain there to infect the next batch of wine. Brett can also cause headaches, according to Dr. Susan Rodriquez from the department of viticulture and enology at Cal State University Fresno. What's more, the sulfites often used to treat Brett can cause allergic reactions.

The problem is a cause of concern for winemakers worldwide, as the contamination can waste millions of dollars, time and wine.
