But the Z-Brett Assay may change all that by quickly determining if a wine batch is contaminated or not. During the process, a spot of wine is added to a chip, which is then probed for a cell surface marker specific to the Brett compound. If Brett is there, the markers bind and produce a dark color, but if not, the chip remains white.
The entire test takes about two hours and can be performed in any environment, such as a field test. It also has flexibility in volume measurements and timing of the incubations of the wine.
