Founded by three brothers, Wing Lam and Ed and Mingo Lee, the first eatery opened in Costa Mesa in 1988. The diner is known for its Hawaiian North Shore atmosphere and charbroiled fish tacos, which combines an eclectic mix of Mexican, Brazilian and Asian fare. In its effort to respect the environment, menu items have been served on china with real silverware since the eatery’s beginnings. “The second most important part of our philosophy is that we take extreme care to listen to our guests regarding their tastes and preferences with menu offerings … and to protect the pocketbook of the consumer at all costs,” says Steve Karfaridis, Wahoo’s partner. “We [also] take care of our employees, treating them as partners and family. They, in turn, are very happy to consistently provide the best service and food quality to our guests in existing and new stores.” The partners, who are almost as well known as their eatery, support the community in a number of ways.
