Ryan Dudley’s fine-dining career was jump-started indirectly by a 1976 Honda Civic. Like a lot of 15-year-olds, Dudley wanted a car. And like many grown-ups would, his father, a single parent, told him that “job” equals “car.” So Dudley became a dishwasher at a local Italian restaurant.
Fast-forward 12 years: The former dishwasher purchased The Cellar, an iconic restaurant in Fullerton. How’d he get from there to here? “I just stuck with it,” he says.
He worked his way from dishwasher to server, then bartender, then manager of Hidalgo Restaurant in downtown Fullerton.
