Secret passion: He’s a big wood hobbyist – “It’s a family thing passed down from my grandfather and dad. I made our bed, desk and coffee tables. I really enjoy the creative process and love working with my hands.”

Guilty food pleasure Michael likes to make for himself: “I really love Southern barbecue. At home I enjoy smoking pork shoulders and barbecuing briskets.”

Fan of Gordon Ramsey’s “Hell’s Kitchen”? “I really like the show. I think Gordon is an incredible chef. I like the way he pushes people to be more than they think they can be. I also love that he can see right through people, and how he is such a great judge of character.” 

Why do so many chefs smoke (and do you)? “I have no idea why chefs smoke – I don’t. Maybe it is an excuse to go outside and get some fresh air?”
 
Michael Stebner, one of America’s top chefs, recently opened the instantly popular True Food Kitchen in Fashion Island. His cuisine has earned him two invitations to the renowned James Beard House in New York. Stebner is a leader in the international Slow Food movement, whose goal is to “counteract fast food and fast life, the disappearance of local food traditions, and people’s dwindling interest in the food they eat, where it comes from, how it tastes and how our food choices affect the rest of the world.” And Stebner finds great reward in his work: “I get to create great- tasting food with the best fresh ingredients.”
