Amelia & Florent Marneau

Marché Moderne is a celebration of cuisine in the classical French style, coupled with a modern piquancy of flavor and flair.
Amelia and Florent Marneau opened Marché Moderne in early 2007 as a culmination of their mutual cooking careers in Orange County. The couple met while working at Aubergine in Newport Beach – he as a chef de cuisine, she as a patisserie. After they married, Amelia became a stay-at-home mother to their two children, Mateo and Juliette, while Florent went on to work as executive chef for the Patina Group’s Pinot Provence in Costa Mesa.
Their Marché Moderne has garnered critical acclaim across the board for its menu, which includes an “Unusual” section, in which Florent offers up seasonally inspired dishes such as Rock Salt Tumbled Octopus Salad and Cured Homemade Teriyaki Confit Pork Belly. Amelia’s desserts are perfect complements, light finishing touches to an artistic meal: fresh-from-the-oven madelines, crème brulees, gelatos and tarts.
