Olé: Matador Cantina opens in Fullerton

After various private functions and a pre-opening celebration, the much-anticipated Matador Cantina opened in Fullerton in April. Its debut was a rousing success, and North County foodies are still buzzing about the newest dining hot spot and social destination.
   
Open daily for lunch and dinner, Matador Cantina offers cuisine that is a fresh fusion of contemporary and traditional Mexican food, created by Executive Chef David Dennis.
   
The menu includes many standards, such as chiles rellenos, enchiladas and fajitas, but they are prepared with a fresh, unique twist, using the highest-quality ingredients to make them refreshingly original in concept, taste and presentation.
   
Fusion items include the instantly popular Chorizo Ravioli, a homemade ravioli infused with a spicy blend of chorizo, beef and Cotija cheese, topped with chipotle cream sauce – buenissimo!
   
Another item quickly gaining reputation as a house favorite is Shrimp Diablo – sautéed shrimp in a spicy tequila-lime-tomato sauce over rice.
