![]() The store is expected to be a big moneymaker for the chain, which boasts more than 50 eateries throughout California, Colorado, Hawaii and Texas. In its first day alone, Wahoo's co-founder Wing Lam projects the new spot will see 20 to 30 percent more activity than the company's average. "Part of the college experience is to eat college food," says Lam. And Wahoo's offers value to students because they don't always have time to cook, he adds, but the eatery offers healthy, cost-friendly alternatives. The UCI store marks the beginning of Wahoo's higher education expansion. The company's goal? "To get into 300 colleges or universities, educate people on how to eat better and introduce them to new things," says Lam.
